At the heart of our distillery are the unique and beautiful copper pot stills, designed by Stillsmiths Tasmania, handcrafted by Kolmark at their Westbury workshop from the highest quality copper sourced from Europe.
Utilising a state-of-the-art control system, Stillsmiths Tasmania has created a fully automated next generation distillery which means at Western Tiers Distillery we can focus on our passion; creating spirits of unmatched smoothness and flavour.
Our range of spirits are premium, each one named after a prominent landmark that surrounds our distillery.
Western Tiers Distillery products make ideal gifts, perfect to have on hand when entertaining or if you’re looking for a little “me-time”.

History:-
In 2016, sharing a passion for hand-crafted, uncompromising quality, two long-time friends, Mark Kolodziej and Tim Freeman put the wheels in motion and a business was created, Stillsmiths Tasmania. Supplying premium distillation equipment to Tasmania’s emerging spirit industry, in the process learning not just what has been done, but what could be done.

Always looking for new opportunities, they had often tinkered with the idea of opening their own distillery. In 2021 the dream became a reality in the historic village of Westbury, nestled among the rich farmlands at the foot of the majestic Great Western Tiers the Western Tiers Distillery opened its cellar doors to the public.

Our distiller:-
It’s not often that a fabricator involved in the building of a distillery, has the opportunity to become its distiller!
That is exactly what John Scott, a long time boilermaker and craftsman has done. From installing our very own Stillsmiths Stills and distilling equipment to operating the distillery is a pathway that John has embraced.
John is mentored by Master Distiller Damian Mackey, famous for creating Tasmania’s distinctively rich, triple-distilled spirits.

Tastings:-
When you visit Western Tiers Distillery then you must have a tasting or two of our premium Tasmanian Spirits.

We have a number of gin, poitín, vodka and whisky options for your to try, whatever your tipple may be.

Whisky drinkers love our whisky wall which features whisky from distilleries across Tasmania that you’re able to taste.

Tastings can take place at our tasting bar or at your seat/table – the choice is yours.
Bookings for tastings are not required.

Whether you’re visiting us for lunch, choose to have a leisurely afternoon sipping cocktails and graze on a platter, you’ll be able to relax in comfort.
All of our food is created using premium Tasmanian ingredients.

An extraordinary way to learn about craft distillation & artisan spirits. See where our Spirits are made & appreciate what’s in your glass. Your knowledgeable spirit guide will give you access to production areas, stills, bottling setup & the opportunity to see, touch & smell our raw ingredients/botanicals.
Tours are limited to 8 people Larger Group Tours on request
